One eyed monster breakfast

There are various names for this dish: egg in the basket, egg in a window, egg in the hole, pirates eye, birds nest, hobo toast, eggy toast, o’johnnies, egg in the middle, one eyed Joe, toad in the hole, one eyed Jack, did I forget one?

I call them one eyed monsters and the kids love them!

Ingredients
Bread
Eggs
Bacon (this is optional, but everything is better with bacon!)

You start by cutting a round hole in the middle of a slice of bread. This can easily be done with a glass or cup. Fry one side in a frying pan with a little butter. When the first side has been toasted, flip it over and break an egg into the hole. Cook on low heat until the egg is done. That’s your basic egg in the basket, pretty boring. So, let’s make it a bit more interesting!

Cut some bacon into small strips and fry them. They will be the hair of your one eyed monster. Alternatively you can use some grated cheese for this. Use the part that you cut out of the bread to give your monster arms and legs. Use mayonnaise and ketchup to finish things. There you go, a one eyed monster!

I love eggs inside of grilled bread…but who ever thought to cut the remaining bread rather than eating it?! woops ;)

I love this! I don’t have kids yet, (maybe in a couple years) but whenever I babysit I love to have the kids cook with me and make the food look fun. I saved this so I can make it for my kids one day.

OMG !!! I nearly died laughing when I saw that picture! Way To Go, Cooking Dad!!! My son likes to have his egg in toast served with spicy Korean Kim Chee. Now I’ll have to find a way to create some breakfast art, instead of just serving it on the side..

I’m glad to see you toast one side before adding the egg. I’ve seen people trying to flip the bread with a partially cooked egg inside = big mess & way too much effort. Personally, I put cover the pan to cook the top of the egg. And toast the other bits of bread too.

Am loving the monster. I’ve got a girly-girl, so am resigned to hearts and flowers and fuzzy-wuzzy animals for the duration. [sigh]
Maybe she’ll go “goth” when she’s a teen….

Hi there, just happen to bump in your blog and saw some interesting ideas. I could say the food really looks yummy and this is fun to prepare with the kids. I always believe with the power of presentation to stimulate my kids’ appetite. This actually addresses the issue with my kids regarding with their eating motivation especially during breakfast. I hope this will work, thanks.
