I love turkey better than beef or even fish. Maybe that is why I am so keen on Thanksgiving. You have some beautiful pictures there of some great cuts. Thanks for sharing. Everyone should have food like this stored away.

I put the fillets with wax paper between them into a plastic freezer bag. The next morning I take them out and remove the wax paper, you could just leave them like they are though.

Do you mean that we place the turkey breast on the baking or wax paper then another one on top… sealing it a bit?
Should we also cover the breast not only with the wax paper on top and bottom but also then wrap it so it doesn’t get freezer burn or taste even if it is for overnight?
